Holiday eats left you feeling cranky and craving sugar? Eat this:

Grab a big bowl.

Tear up some radicchio and layer with some baby spinach (or whatever baby greens float your boat. Baby greens are easy to digest and packed with nutrition.)

Segment an orange...yeah...do it the fancy way cause it looks good and releases more juice that way. Taking a little time to make it look pretty feeds your soul, too! We eat with our eyes as well as mouth. Nom Nom!

Chop a pomegranate in half. Hold the cut side down in your palm and whack the snot out of the rounded part with a wooden spoon. Out pop the jewel-like pomegranate seeds. Plus, beating on a pomegranate is just good clean fun 😂

Grab a carrot and use a veggie peeler to add some wisps of carrot

In a separate bowl mix the juice from the remaining orange bits, a bit of orange zest, 1 tbsp extra virgin olive oil, a high quality balsamic (I used cranberry balsamic because you know...New England), a dollop of dijon mustard, sea salt and a crack of fresh ground black pepper. Whisk it together. Ditch the bottled dressing...this one is better I promise. 

Toss it all to coat until glistening with yumminess.
